Nathan Marsh: We had a simply marvellous experience at Hubert! The staff in this venue are exceptional and everyone was incredibly lovely. There is something special about Hubert and it is a testament to the people who work here. It is obvious that the staff are all very proud of where they work and so they should be, as they are what make experiences like ours happen.Our wait staff were all very knowledgeable about the menu and all had personal recommendations, plus nothing was too hard. You can always tell when a restaurant has given their team the opportunity to really experience the food and these guys were passionate. From the moment we entered, to the moment we left, we were made to feel welcome and special.The sommelier was patient and very accomodating with helping us chose a wine. I am not an expert in describing what I want, but I know what I like and with a couple of tastings, he helped us achieve that, while remaining within our price guide. The food blew our mind! Every dish had something unique to offer and nothing disappointed. The small plates were the absolute winner for me and I think next time I will opt for more of those instead of venturing into the mains. The crab espelette was incredible! Fresh and buttery at the same time. The flavour of the sea was still there, but it managed to balance a richness that left you wanted soooo much more. I would have loved to have seen some more options on the menu in terms of the larger plates. Perhaps a ‘Hubert version’ of some classics such as Beef Bourguinon, coq au vin, or a cassoulet. However, I could not fault anything and could taste the love in everything we selected. I will definitely be back to try the chicken fricassèe. A huge shout out to the person who take our coats, to whoever washed our plates, you are all making magic. It was the best experience we have had in a while and made my partners birthday extra special.

I was sitting at the bar with my friend and we were sitting in between 2 couples.The couple on our left was Aussie couple and the one on our right were Asian. And we both could notice the different treatment from their staff and the the bald manager. They will keep asking and checking the Aussie couple if things were ok, they checked on us as well but they wouldn’t check with the Asian couple. Seems like they don’t treat people equally.For the price that they charged, I would have to recommend others to go to Bennelong, 6 Head, or even Woodcut as they’re not even as great as others fine dining in terms of food and especially the service.The food were a bit cold. But their margarita taste good.

Some items lacked seasoning and some items were really delicious. Really enjoyed the chicken and spanner crab, but the fish was quite disappointing. So overall it didn't quite meet expectations.

A waitress offered us oysters, but when I refused, she gave us a disapproving look.3. A waitress tried to immediately take down a plate of food that had not been completely eaten, which made me uncomfortable. Some customers want to eat a little at a time.4. The wine bottle is not placed on the table, so if I run out of wine in my glass, I had to wait until a waiter comes to pour. If the service does not allow pouring wine into empty glasses, it should be abolished.

I am not usually one for "fancy" food, but I tried to keep an open mind here and I'm so glad I did. I tried all the options and each element was delicious. I had not even heard of eating pearl meat, but it was wonderful. If you are unsure of a new food item, this is an ideal place to try them.

I had my first bite and couldn’t finish it as it was extremely chewy/rubbery, so i asked my husband to swap with me as I thought it was just to my taste. He had a bite as well and confirmed it was so chewy and rubbery, and could not finish it.We told the server who was helping our table but didn’t receive any apology whatsoever, or offered to change it. But she did acknowledge though as she saw that the wagyu was barely halved. So we were confused if it was a language barrier or she just didn’t know what to do. Very awkward, but we just didn’t want to cause a scene.Overall, we wanted to love it as it was for our anniversary, but i don’t think it’s worth it unfortunately.

Sandra Gounden: I organised a high tea to celebrate my friend’s milestone birthday on the 26/3/23. To begin with they didn’t have the teas that we requested. We were given just one sandwich each, which was stale. This was suppose to be an ‘Easter high tea’ but had absolutely nothing relating to Easter. When I enquirer about this, I was presented with brownies, which were rock hard and couldn’t be cut. I did call the next day and was told that someone in management would give me a call, still waiting!!!!Overall a very disappointing experience. At $75 per person, you’d be better off spending your had earned money at the Sheraton for their high tea or even Lilianfels which are much cheaper and better quality in my experience.

Alex Gladney-Lemon: I had the mushroom crumpets with the morning margarita. Crumpets were burned on one side. Eggs were slightly over and margarita was nothing extraordinary. At over 45 AU dollars you would think it could be better. Service though was great we were able to be seated straight away, even though it was packed. Oliver Lynch: First and foremost the potato bread is not a good dish, A, the bread is a tiny portion (just the size of an ordinary coles roll…) and B, the trout roe, dashi & kefir cream that is served alongside the roll is not a great combination with the bread and they’re charging $25 for that dish solely because of that… The best wood fired bread I’ve ever had was at Nomad and it was only $15 as it should be… Now onto the positive aspects of Ester; Ricotta Gnudi was great however I felt as though it could’ve been a tad more flavoursome (the tomatoes pack all the punch). The Morton Bay bug was perfect, great presentation. The squid ink dumplings were unique however weren’t an amazing dish. Lastly, the crepe brûlée was amazing however there could’ve been a bit less of the lemon sauce as it was rather strong.

I had a wonderful time sharing a birthday meal with my partner and family and found both the food & service to be uncompromising in their quality.The atmosphere was warm and inviting with soft lighting and a rustic interior; the menu featured beautiful seasonal dishes to warm our bones on a cool winters evening. The staff were very passionate about the wine selection and their knowledge was impressive.

Michael Carrington: I walked in early on a Wednesday evening and was greeted with a smile. I found a seat at the bar and ordered a few delicious morsels off the bar menu - marinated olives, porcini and pecorino croquette, and crudites. All this was washed down with a 3 different styles of wine by the glass recommended by the friendly bar man. Fantastic. Thoroughly enjoyed every mouthful of wine and food. Love the place.

Though training could be provided as had three different people wiped our table one after the other even though it was clean (was a tad intrusive especially given we were on a two hour time limit and it took 20 mins to be served). Food was great as usual! - what I wasn’t happy about is that we were rounded up well before the 8pm sitting end. 20 minutes early in fact. And worst case was that we paid cash and no one brought back the change. The person who was pushing us to leave, miraculously disappeared. Tips are at the discretion of the customer and it’s extremely rude not to bring back change to allow choice.

I decided to do the wine paring and for someone that knows the globalwine scene quite well, I was particularly impressed with our sommelier Vikki. Her knowledge and understanding of wine was outstanding and this really helped turn a great night into an absolutely incredible evening.
